Speaking of Valentine's Day!

A Really Sweet Treat!

German Chocolate Upside-Down Surprise Cake!

I know you've heard me mention our beloved Opal!
Well, Opal gave me the BEST cookbook for Christmas
"Betty's Country Cooking with Southern Grace" 
and I found this cake recipe, and knowing that my daddy
Loves German Chocolate Cake, I had to try it!
Oh, my goodness! 
Serve it warm,
 everyone loved it! 
Even Daddy Money, who doesn't really love sweets
 had some with his after Sunday Dinner coffee!
He even took a piece home for
his dessert with his supper plate!
Now, you KNOW it's good when he takes dessert home!
Amy rarely eats dessert or at least a very small piece,
trying to be good with those calories... she had a second little piece! 
She suggested we make this for Pop next September for his 92nd Birthday!
I will!

German Chocolate Upside Down Surprise Cake

1 C. Flaked Coconut                    
1 C. chopped Pecans                    
1 German Chocolate Cake Mix          
1 1/4 C. Water                             
1/3 C. Oil                                         
3 Eggs                                         
                                                              
  Filling:                                                 
3 1/2 C. (about.1lb.) Powdered Sugar
2 Sticks Butter, melted
1 (8oz.) Cream Cheese, softened
1 T. Milk

Pre-heat oven to 375 degrees.  Grease 13x9 in. pan.  Sprinkle Coconut and Nuts over bottom of greased pan.  In Bowl, combine cake mix, water, oil and eggs; beat 2 min. on high speed.  Spoon batter evenly over coconut and pecans.  In another bowl, combine milk, powdered sugar, melted butter and cream cheese; beat until creamy.  Spoon evenly over batter to within 1 in. of edge.  Bake at 375 degrees for 50 min.  Cool and cut into squares. 

Note*We served it warm and it was wonderful!

Please Pardon my excitement if you have already baked this cake as the Earthquake Cake!  It was a first for us and we loved it!
